5 Dangers of Modern Day Nutrition
The Standard American Diet or "SAD" diet is causing illness and disease. Did you know the disease prevalence and medication use in the US is higher than any other country? We even rate among the worst for health care outcomes despite all the money spent in health care today. 
 
I believe there are a few reasons for this. One HUGE factor is our diets today. There are five main dangers. 
 
 
SUGAR:  SO, WHAT’S WRONG WITH SUGAR? 
 
The main problem with sugar is that it creates an acidic environment and causes inflammation in the body. Disease processes thrive in an acidic environment. Sugar is linked to increased growth of yeast in the stomach, eczema, diabetes, mood alterations, anxiety, depression and hyperactivity and many other disease processes. If you or your child is consuming a diet high in sugar, then you are no doubt going to be more susceptible to developing these symptoms. Some of the ugly sugars that are a MUST to avoid are things like High Fructose Corn Syrup, Corn Syrup Solids, Sucralose, Aspartame etc. Use healthier alternatives such as xylitol, stevia, or raw honey.
 
BAD FATS: The big myth is that fat makes you fat. The truth is Bad Fats make you Fat. 
 
Bad fats also cause inflammation at the cellular level. Your cells need healthy fats to help make and repair themselves. The bad fats damage the cell walls and in simple terms the good stuff cannot get in and the harmful stuff cannot get out (cellular congestion). 
 
Bad saturated fats to avoid are:
  • hydrogenated and partially hydrogenated oils
  • vegetable oils (corn oil, canola oil, cottonseed oil, soybean oil, safflower oil, and sunflower oil)
  • Trans fats (margarine, synthetic butters, and shortening)
  • Roasted nuts and seed butters.
Healthy fats are essential to brain development, cellular healing, anti-inflammation, absorbing vitamins, cushioning vital organs, increased awareness and learning abilities, increases heart health, focus and concentration. 
 
Healthy fats include:
  • Olive oils
  • Raw nuts and seeds
  • Omegas-flax seed or fish oils
  • Coconut oils
  • Avocados
TOXINS: The FDA has approved more than 3,000 food additives, preservatives, and colorings.
 
Most of these chemicals are classified as neurotoxins and/or excitotoxins and have detrimental effects on brain function and especially in a rapidly developing child’s brain development. Excitotoxins and neurotoxins are substances that cause excess of excitatory neurotransmission in the brain. This can lead to neuron death and chronic inflammation in the brain. Most of these did not exist a century ago. There has been NO research done on the long-term effects of these chemicals on our bodies. Bottom line is you MUST read your labels! Examples are chemical food dyes (Red #40, Yellow #6, Blue#1 etc.), monosodium glutamate (MSG), aspartame, etc.
 
GLUTEN:  What is it and why might it be bad? Gluten is a protein found in grains such as wheat, rye, barley, spelt etc. In a healthy functioning digestive system, enzymes will break down these long chain proteins. Commonly in American, there are digestive/malabsorption issues or what people may know as IBS, Leaky Gut, and Celiac Disease. Symptoms of gluten intolerance can be bloating, constipation, and diarrhea. 
 
The problem can be that enzymes are not present to break these proteins down. This can cause the proteins to stay in peptide form. Peptides have an opioid effect if not broken down properly causing not only the symptoms listed previously but also neurological symptoms such as brain fog, anxiety, decreased cognitive function, dilated pupils, depression, and sleep disturbances. They also cause addiction to these foods. 
 
But you must remember that Gluten is not the “cause” of the dysfunction. One MUST address the question, “why did the body develop the inability to break down and absorb a natural occurring protein in foods?”  
 
Toxicities, a diet high in preservatives and processed foods and lack of beneficial bacteria in the gut are just some of the causes. Avoiding gluten, adding digestive enzymes that contain DPP- IV, and adding a probiotic daily can make a world of difference! A side note: If someone has had their gallbladder removed, they should be on digestive enzymes FOR THE REST OF THEIR LIVES. If they do not support this, they will end up with IBS and eventually Diverticulitis.
 
CASEIN:  Casein is a milk protein similar to the molecular structure of the gluten protein. It is found in Cow’s milk products (cheese, milk, creamer, butter) Due to digestive and malabsorption issues the improper break down of this protein produces the peptide casomorphin, an opioid that acts as a histamine and increases inflammation throughout the body causing similar symptoms as Gluten but most commonly increased mucous membrane congestion(lungs/sinus/ears) and constipation.  
 
Hidden sources of casein are Sodium Caseinate, Calcium Caseinate, Milk Proteins, Fortified Proteins, Milk solids. Removing these products from the diet, adding in digestive enzymes and probiotics is a basic place to start. Alternatives are goats’ milk, Ghee (clarified butter), nut milks such as Almond, Cashew and Coconut.
 
Addressing diet is so critical when dealing with health issues and one of the easiest ways to turn your health around. You can simply start with just reading your labels. What I teach all my patient’s is this simple phrase “If you can’t read it…don’t eat it.”  Try to keep the number of items listed in the ingredient’s labels to less than 8-10. Ideal is to have all organic and non-gmo.

When I was first told that my son at 2 years old had a toxicity issue I thought the practitioner was crazy!

I could not wrap my head around how it was possible that by the age of 2 he was toxic.  I soon learned that it was not from just one source but multiple sources that caused this, one included ME as the culprit.

Around 2 years old my son began to show signs of toxicity but I had no idea that was what it was.  Jacob, my second child, had head to toe severe eczema.  When I say severe eczema that is an under statement.  His skin was literally peeling off the bottoms of his feet and legs.  It almost resembled a flesh eating bacterial infection.  He would get cracks so bad on the bottoms of the feet he could hardly walk.  He would also scratch the skin on his arms, belly and neck to the point it would get infected.  Jacob had pain all the time. ” My Back, My Back, My Back” were constant words we heard. Jacob had severe light sensitivity to his eyes as well. “Owie my eyes. my eyes” echoed our car when traveling anywhere. Have you ever seen those dark sunglasses that the elderly wear?  Yep, those were a part of his daily wardrobe.

There were many other symptoms he was having as well like, delayed speech, minimal eye contact, sound sensitivity and low muscle tone.  I found myself at Children’s Memorial Hospital in downtown Chicago where they wanted to begin testing and diagnosing Juvenile Rheumatoid Arthritis.  It was at that moment I knew in my heart I HAD to find the cause.  As a nurse, I knew very well what the coarse of treatment would look like for my son if I did not.  For me, I was not ok with a life of steroids, chemotherapy drugs like methotrexate and more.  I knew one thing.  If I wanted different results than others were getting in this same situation then I HAD to do something drastically different.  This began my search for the CAUSE and led me to find a natural practitioner that does what I now do for my patients.  GET TO THE CAUSE! The causes for my son were heavy metals like mercury, toxic mold and foods he was allergic to.  We were living in a house that had toxic mold and I didn’t know it.  The heavy metals actually came from ME in utero.  What I learned is that if Momma is toxic…. baby is toxic.

The environmental working group published a study in 2005 showing the Body Burden of toxic chemicals found in newborns.  287 industrial chemicals were found in the cord blood of newborns. The results were astonishing! You can read the article HERE. There is also a CNN ongoing report called TOXIC AMERICA that was done with even more startling findings.  Reality is we live in a toxic world!  SO what can we do about it?  Live in a bubble?  Move far away to a secluded Island?   I used to think so.  But that is not realistic.

What we had to do for my son is change his diet dramatically, change his environment by removing toxic sources like air fresheners, baby products with artificial dyes and dangerous chemicals, pesticides used in the home for bugs, and much much more.  We also had to DETOX him.  To say it was overwhelming would be an understatement.  To say it was easy….. would be a lie!  But one thing I do know. IT WAS WORTH IT!  My son is now 11 years old and you would have NO IDEA he went through what he did!  He has no symptoms what so ever, plays travel baseball, loves to Golf and gets nothing but A’s and B’s in school! Addressing the toxicity issue for him was the KEY to his health!

Why Cholesterol is NOT the Bad Guy

Cholesterol has gotten a bad rap over the years for causing heart disease, strokes and more.  But is it REALLY cholesterols' fault?

Cholesterol is a vital part of our health.  Without it, we would not survive.  If it alone was so bad then why in the world would our bodies create it?

THIS SUBSTANCE is manufactured in the body by the liver and the cells and you might be surprised what all it is responsible for.

  • It plays a vital role in brain structure

  • Male and female hormones are actually made FROM cholesterol

  • It is anti-inflammatory in body

  • Vitamin D is made from cholesterol which is critical for calcium absorption

  • Digestion depends on proper bile production which is created by cholesterol

These are only a few critical roles cholesterol plays.  So then what the heck makes cholesterol begin to act so badly that leads people to believe cholesterol is bad?  Cholesterol begins to “act badly” due to sugars, bad fats and toxins. These are the culprits that cause the cholesterol to oxidize and produce the plaque on artery walls.  The body in fact responds to the sugars, bad fats, and toxins and will produce more cholesterol to actually help clean up the mess.  The body will work very hard to keep inflammation and oxidation down.

So when a person with high cholesterol goes on a statin drug without actually getting to the CAUSE 

of the problem it can cause very serious health issues.  In fact, this can actually cause worsening heart disease, stroke, hormone imbalances, vitamin d deficiencies and more.  The list of side effects from statin drugs is overwhelming!  The way statin drugs basically work is they destroy an enzyme in the liver responsible for the production of cholesterol.  Coenzyme Q10 is a critical antioxidant in the body and anyone who is on a statin drug MUST take a CoQ10 supplement to help decrease the side effects of the medications.  I of course recommend addressing the underlying cause of the high cholesterol instead.

REMOVE THESE FROM YOUR DIET

  • Sugar and refined carbohydrates – Both stimulate the liver to produce more cholesterol and increase inflammation.

  • Alcohol – Also stimulates the liver to produce more cholesterol, increasing cholesterol levels and inflammation. A glass of red wine per day may be cardioprotective, but anything more than that will increase your cholesterol.

  • Hydrogenated/ Partially hydrogenated fats – Vegetable oils(Canola etc) are pro-inflammatory and may increase cholesterol.

  • Caffeine – Too much caffeine can increase cholesterol. Limit coffee or tea to no more than 1-2 cups per day

  • Trans fats – Increases LDL cholesterol, inflammation, and risk of cardiovascular disease.

ADD THESE TO YOUR DAILY LIVING

  • Omega-3 fats – Foods high in omega-3 fats can help increase HDL cholesterol and reduce risk of cardiovascular disease. Raw nuts and seeds, wild caught/pacific fish and Omega 3 Supplements(be sure clean pure source)

  • Foods high in soluble fiber – Soluble fiber binds cholesterol in the digestive system causing it to be excreted by the body. Include plenty of fruits, vegetables, sprouted nuts and seeds and other fiber rich foods.

  • Olive oil, Coconut Oil – Helps raise HDL cholesterol.

  • Garlic and onions – These two cholesterol reducing foods help lower LDL cholesterol because of their sulfur containing compounds which help cleanse the arteries.

  • Herbs – Add a variety of spices such as basil, rosemary and turmeric to your food which contain antioxidants that are cardio-protective and help lower cholesterol naturally. Organic Red Yeast Rice supplementation

  • High Antioxidants- Oxidation requires “anti’ oxidants to repair the damage.  The highest level of antioxidant can be found in Ningxia Juice.  The darker, deeper color of a fruit the higher the antioxidant it is.

3 Simple Ways To Support Your Immune System
We all have times when we could use a little extra boost to our immune system. Cold and flu season are certainly part of that time, or the long winter weeks when we’re stuck inside and more likely to catch something. It’s also important anytime you board a plane or when your kids start school. Here are three simple things you can do daily to strengthen your immune system. Which brings up a good point: For best results, implement daily. Let’s start.

Eat Plenty of Fresh Fruits and Vegetables
All systems of your body work best when they are properly fed. This includes your immune system. Stick to a mainly whole foods based diet that includes plenty of fresh fruits and vegetables. If you feel like you might be a little under the weather or suspect that you may have come into contact with someone sick, increasing your intake of Vitamin C may help as well. Eat a few citrus fruits. Broccoli, cauliflower, and kale are other great options.
Avoid eating processed foods. It takes a lot of time and effort to digest them and you don’t want to weigh your body down with extra work when that energy could be used to boost your immune system, keep you from getting sick, or help you get well sooner.

Get Some Exercise
In addition to eating well, get out there and get regular exercise. For best results, work out in the fresh air. Something as simple as a daily quick walk can help you stay well and strengthen your body. It has the added benefit of helping you to de-stress. I don’t have to tell you that you’re more likely to get sick when you are stressed out. Use daily exercise to destress and stay well. It will also help you with the last way to boost your immune system.

Make Time for Sleep
This last tip is easy to skip over, yet it is the most important one for most of us and the one that can give your immune system a great boost. It’s getting enough sleep. Make the time to get seven to eight hours of sleep each night. Practice good sleep hygiene. Don’t let the word scare you. It means turning off your phone and other screens a few hours before bed. Keep your bedroom calm, quiet, dark(important for the pineal gland and melatonin production) and at a temperature that encourages sleep. It also includes establishing and sticking to a bedtime routine. Add a diffuser with lavender oil and create a zen environment, As an added bonus, you’ll feel more energized for everything else you have to do all day.
